Dusted Bluefin Tuna with Fennel Crust With dashi jelly, onion cress and gazpacho vinaigrette

Pan-Seared Norwegian Scallops With tomato jam, daikon and pomegranate confit

Jerusalem Artichoke Potage With crabmeat quenelle and ginger-scented caramelized apple

Lobster Exotique With sweet potato aligot, vegetable noisettes and pineapple sauce

Salmis of Duck With lyonnaise potato, red cabbage, fine bean and foie gras jus
