If you enjoy Indian cuisine and appreciate the kind of dining experience that goes beyond the familiar, there is something happening at Robertson Quay right now that deserves your attention. SanSara at Grand Copthorne Waterfront Hotel is hosting Two Masters, One Flame, a four-hands collaboration between its own Master Chef Pannalal Nath and Chef Sohan Singh of RANG, a modern Indian restaurant in Da Nang, Vietnam that holds a MICHELIN Bib Gourmand distinction.

The collaboration runs until 28 March 2026, so there are only a few days left to catch it.

What makes this one interesting is the pairing itself. Chef Nath brings deep classical North Indian foundations, the kind of cooking that prioritises depth of flavour, layered technique, and an understanding of heritage that takes decades to develop. Chef Sohan brings something quite different — a contemporary sensibility shaped by time spent cooking across Dubai, Sydney, the Maldives, the UK, and the Caribbean. These are not two chefs doing parallel things on the same menu. They worked together on dishes that sit at the intersection of both approaches, and that creative tension is usually where the most interesting food comes from.

The six-course dinner at $98++ per person is the fuller experience. Some of the standout dishes give a good sense of the range on offer. Chef Sohan’s Sweet Potato Gnocchi Chaat pairs tamarind, pomegranate, yoghurt, and mint leaves in a way that takes a street food classic somewhere more refined. His Tandoori Octopus with almond romesco, pickled onion, and nigella seed reads as genuinely adventurous. On Chef Nath’s side, the Shorba Jhinga is an Indonesian crayfish bisque built with turmeric, fenugreek, and fresh coconut cream, and the Sansara-Nasila Dunger Lal Mas is a Rajasthan lamb curry duo served with eggplant caviar and a goat cheese and olives naan. For dessert, Chef Sohan’s Carrot Halwa Mille Feuille layered with vanilla cream, mango, and fresh berries is the kind of dish that bridges the two worlds the menu is trying to bring together.

If the full dinner feels like a commitment, the four-course lunch at $68++ per person offers a more accessible entry point, featuring select dishes from both chefs alongside Chef Sohan’s Zaffrani Barramundi and his Masala Chai Tiramisu to close.

If you miss the collaboration window, SanSara has also just launched a new à la carte Sunday Brunch at $98++ per person, running every Sunday from 12pm to 3pm. Curated entirely by Chef Nath, it covers the kind of North Indian classics done well — tandoori grills, hearty curries, handcrafted breads, and traditional sweets like Gajar Ka Halwa and Rasmalai. A solid option for a long Sunday lunch, particularly if you are in the Robertson Quay area.
